First off, good luck!! UF is an awesome school and I remember applying about a year ago as well.
The best advice I can give you is to in your essay, to mostly SHOW them why you should be in the school and why wold make a great addition to campus. This gives you time to develop a pretty good narrative, try to be descriptive, the things that you focus on will also show what things are important to you. You should get across what kind of person you are without right out without spending your entire essay telling them what kind of person you are.
That being said, both topics sound great! I think with the latter one though you can perhaps refer more to the change you made ( did you get letters or pictures back perhaps that showed what you helped change?) and how that impacted you as a person, and how you carry that change with you in your everyday life. Also, try exploring other experiences that involve some personal change. Don't write something that you don't feel strongly about because it will show. My own essay was about coming from another country to Miami and how that fueled my love for diversity, acceptance and for learning about different cultures.
