I'm so sorry about your mom, but this doesn't seem like something any halfway reasonable teacher would do to you on purpose. My guess is that this assignment was planned months ago, and just happens to have a different meaning for you now than it would for most people. It is actually a pretty good assignment, except that the timing for you would be awful. I think that if I were you I would go to the teacher and let her know that the prompt hits too close to home right now, and you just can't focus when you think of it. Ask her if she could give you an alternate prompt that would be a little less personal. If she realizes that you are willing to write an essay, just not on the assigned topic, she should be sensitive enough to allow it.

Those who use the Bible to discriminate against gay people do not use the same part of the Bible to discriminate against men who shave, barbers, people with tattoos, pork eaters, football players, and people who eat shellfish. Those who use the Bible to discriminate against gay people are not following the Biblical words of "Do not judge, or you too will be judged. For in the same way you judge others, you will be judged, and with the measure you use, it will be measured to you." in Matthew 7:1-2, the words of "So in everything, do to others what you would have them do to you, for this sums up the Law and the Prophets." in Matthew 7:12, the words of "Do to others as you would have them do to you." in Luke 6:31, or the words of "The entire law is summed up in a single command: 'Love your neighbor as yourself.'" in Galatians 5:14. Those who use the Bible to discriminate against gay people care more about their own bigotry and prejudice than their faith.
