wow thats a too big to read! Anyway, i am answering based on ur main question , didn't read all the details :)

I am from India and staying in USA for last few years. We keep in touch with our families all the time. BUT here is what we do ... we only call my parents and brother/sisters and my husband's parents/siblings. Usually we call the parents once a week and siblings like a couple of times a month.
We don't call any others much.. usually on their birthdays and special occasions like new year/diwali etc. we do call grandparents once in while though.

For all the rest we keep in touch with emails/chat on messangers and such.

As far as your situation, i would just say it looks like you are doing enough. :) Just let them know sincerely that because of the time-difference its really hard to manage to call everyone there in India more frequently and you are doing your best.

And don't be defensive, just tell them so matter-of-fact. And tell them you'll keep sending emails and keep in touch.

They shouldn't really be offended and they should agrre with keeping in touch by emails.
