Think of your opening as if they were presenting the argument to you. What would they have to tell you to convince you that moving to Spain is a good idea. Now think about your parents, you should know them pretty well because your argument is going to based on what's in it for them.

The opening I would use is to impress on them the great opportunity they have in front of them. Not many people get to pick where they get to live if they have to worry about a job. Usually work and the availability of it is what determines where you live. So having the ability to live anywhere and still generate an income is great.

Having knowledge of your parent's likes and dislikes helps to make your argument more appealing to them. I would list three options with Spain being the best of the three that way you are indirectly guiding them to your choice. The goal is to make them think that they came up with the great idea. It is not too hard. Get them to buy into the idea emotionally and the logic will follow.

Of course this essay is an exercise in creating a persuasive argument and the best way to be persuasive is to address the "What's In It For Me?" position that your parents would have.
