My advice would be to list your past positions, focusing on the elements of your experience most relevant to the job you are applying for. Your experience in customer service could prove an asset to your potential employer - and it shows that you are not new to the job market. But don't write too much about the less relevant areas - just touch on them.Personally, I am always more interested in the ability, motivation and potential of a candidate than I am in their graphic design qualifications. I've worked with enough graduate designers to know that it's not the degree that enables them to do the job - it's their attitiude and ability to learn and adapt themselves to the job in hand.
If the job is for an entry level designer, the employer probably won't be expecting a candidate to have a huge amount of graphic design work experience - so your varied job background could work in your favour. Many candidates going up for the job won't have any work experience at all.

I think that "entry level" jobs are just that... Entry level. As long as you meet the minimum requirements for the position, I'd say go ahead and apply.As for an effective CV, I had dozens of people review mine. Some made good suggestions, while others I ignored. But any feedback you can get is great.
An effective cover letter should address the following: why you're interested in the company (brief), what position you're applying for (very brief), and why you think you'd be the perfect person for the job (rest of the letter). When doing the last part, make sure you mention the desired qualifications. If they say they want someone who can be a leader or manager, make sure to mention that you were a bar supervisor for 2 years!

You have a skill that people will pay for. Start your own architectural firm. You'll be the boss. Work when you want. Play when you can. If you're not any good, your clients will tell you (you won't have any). If you're awesome, your clients will tell you (you'll have more work than you can do and you'll start hiring people). Good luck!BTW, knowing that what you get paid is based upon the work you do, it's easy to get out of bed with a positive attitude.
