Either sentence could be correct in context. It depends on the audience for whom you are writing.

In light explanatory writing, in which the emphasis is on the enzyme lipase, (A) is acceptable.

In more detailed writing, in which you wish to inform the reader of the versatility of the enzyme lipase in its ability to digest more than one fat, use (B).
