Which language is native? Spoken at home?Visual aids are a tremendous help. For example, instead of reading the word apple/manzana, show her an apple.
Pictures are worth a thousand words.
Beyond using visuals, my only suggestion really is practice. It is something that you have to do EVERY day.
Reading and writing is so important for self-reliance in the world today. She must convince herself to be persistent and not give up. If Spanish is her first language, then in my opinion, she should learn to read and write in Spanish first... but she can learn to do it simultaneously with English.

How long depends on the language and on what language (s) you already speak.I can vouch only for Japanese. Studying efficiently and constantly for 3 and a half years, I am able to read books and understand about 80% of the content but since I didn't have much listening practice in those 3 years, conversations are a little more difficult. I think this is on the fast side for people who don't go to Japan but I know a few people who reached my level in a little under 3 years. All of those people lived in Japan or spoke 3 or more languages before Japanese.
French is quicker for most people but the basics take a lot more work. Since its closer to English its hard to gauge your fluency. The pronunciation is much harder than Japanese (which is one of the easiest languages to pronounce). I'm studying it now and I find Japanese to be a lot more fun because its so different for an English speaker.
I hear Chinese has some of the easiest grammar in the world to make up for its massive amount of characters (way more than Japanese), but those characters will probably take you a while and tones are rough.
If your looking for easy and quick, since you know some Spanish, and you speak English, French will definetly be quicker but learning a language with different grammar and writing system from your own is very rewarding.
EDIT: Sorry I totally missed that you said Korean. That changes my answer a bit. Japanese will still take a while but you might have more pnemonics to work with because alot of Japanese words sound very similar though everything else is very different. And you already know about learning a language different from your own so ignore that line. haha sorry
