I recommend restating what the job description says. For instance:

In my experience as a(n)_______________, I believe I am a great fit for your organization as I am a--repeat the skills you have that they're looking for here--.

In addition, I am a quick learner and not only keep myself organized, but am great at keeping others organized as well.

I really don't think you're going to have to give examples as everyone knows what a quick learner is and what it means to be organized. You're more likely going to get more difficult questions, such as 'What are your interpersonal skills like? What type of person do you work best with? Where do you see yourself in five-ten years? Why are you looking for a new job?'

Make sure you keep your cover letter brief and to the point. You need to sell yourself in it so describe your best qualities as well as the qualities you have that they're looking for. Be upfront and honest and then save the "examples" for the face-to-face interview, but only if they ask for them.
