The letter you send AFTER an interview is a thank you letter not a cover letter.

Its actually not that difficult. You can find a sample cover letter on http://www.careerbuilder.com when you post your resume on their or even try to apply for a job (even if you are not signed up yet) they have the option of you including a cover letter. If you do not know what a cover letter includes, they provide you with a cover letter sample that has the outline of the requirements for a complete cover letter.

Some basic tips are to refer to the company moreso than you (by this I mean dont say I too much) instead focus on your skills and strengths as a worker why are you best suited for the position. Most job interviewers ask that question. Your cover letter emphasizes your strengths as a professional. Feel free to use adjectives but do not type "I" too often. Re-struction your sentences to cater to the company you are applying to! Sometimes one error on a cover letter gets it thrown out and never seen by the employers so REVISE!!
