What are the effects of pH on Enzyme Activity? I'm trying to write a simple scientific report. How do I start?

It depends on the enzyme. Each enzyme has its own optimum pH. For example, pepsin, a stomach enzyme has an optimum pH around 2.
Amylase, a enzyme found in saliva, has an optimum pH around 7.

So that optimum value is the pH at which the efficiency of the enzyme peaks. As the pH increases or decreases from that point, the activity of the enzyme decreases. Until the pH gets so extreme that the enzyme begins to degrade and loses all function.

The cause of this effect is the addition or removal of H+ ions to the enzyme, caused by a decrease and increase in pH, respectively.

One is the simple physics of collisions. Rutherford Back Scattering is used today to measure thin films. It is just bouncing balls so is not affected by chemistry.
The physics of elastic collisions was well defined by others. (billiard balls with balls of different masses) People used radioactive sources and understood the nature of alpha particles. So when the very thin film of gold didn't stop most of the particles, there was no surprise. The ones that did, were the surprise and the interesting/useful part of the experiment.
Newtonian physics, elastic collisions, alpha particles, radioactive sources were available.

"Aim" is the same as objective. What are you hoping to accomplish?
Hypothesis is a statement of what you think is going to happen.
Materials is what you're using for the experiment.
Method is how you do the experiment.
Results is the data you collected.
Discussion is talking about what happened, whether or not your hypothesis is supported by your results, what went wrong if anything, anything unexpected that happened and so on.
Conclusion is summing up whether or not your hypothesis appears to be correct.
