Express these thoughts to your potential employer. Ask if there is potential in the future to move more towards the area you are interested in.Or maybe you should just hold out for something more suitable. As long as you are active in your search for employment, just going for the first job you are offered is not always the best idea.
What I would do, however, is immediately start brushing up on the skills where you fall short, as other positions you are interested in may also require a higher level of expertise than you currently possess.

We were told to spend 15 mins on reading the data, and 1 hour writing up the report
You have to mention all pieces of data, saying whether they are relevant or not to the business
You also have to advise them on opening a business normally
You can do this be looking at financial figures given etc.
As for how much... as much as you can :)
