You can do it in many ways. But, you did not mention which variable you did change during your experiment. However, it seems to be matching with an experiment which determines the improved resistance in seeds of a plant to different stresses. If not so, then the experiment might be studying the effects of nutrients and environment on growth of plants.

This is based on improved efficiency of plants with regard to their water and nutrients uptake during growth. Plants produce osmo-protective molecules (genes) in adverse environments and soil conditions. You can choose different soil types with varying degree of salinity as well as with different nitrogen and phosphorous contents therein. Water availability is another parameter that could be studied in such experiments. Also the effects of presence and absence of light can be studied. With higher plants the process of change at the genetic level is slower and if you want to do such tests you should select seeds of smaller species.

1) a brief description of the objectives of the experiment, including a brief description of the physical principle being investigated,
2) a description in your own words of the experimental procedure, including sketches of the apparatus used,
3) the experimental data in tabular form,
4) analysis of this data, including graphs, and
5) results and conclusions.

Depends on your crayfish, doesn't it?
Anyways, concentrate on measuring and statistical analysis. You're going to have to measure a bucketload of crayfish.

Things to look for:
coloration. Can you quantify that? Males are redder and females are browner.
spikyness. Can you measure that? Males are more spiky.
width of the abdomen (might need to take that in relation to the size of the individual)
claw size - males have bigger claws.
claw "sharpness" Can you measure that? Male claws are blunter so they don't damage the female too much when mating (the male grips the female by the head - this usually clips the long antenna short).
Pleopods - the first pair or two are modified in males for mating.
