You may want to ask your teacher how he or she wants it formatted. He or she should be able to clear up any questions you have about it.

As for the paragraphs question, you should probably use paragraphs to separate different aspects (characters, setting of the book, etc... )of the book you are summarizing (although, theoretically, if all the information you had written was about the same aspect, then you could put it in one paragraph I suppose).

But if you are asking to take something from an online website
you can copy and paste it into a box that you draw in Microsoft Word and move the box around if your science project text is in the document.

If you are just talking about highlighting online
you have to copy and paste everything in microsoft word
find the highlighter, which is next to the text color and font
then highlight what you want.

Are you talking about project monitoring or project control. They are two different things, both of which require a good bit of explanation. I suggest you find a couple of books on project management. There are probably some used one at Amazon.com
