Take this insight from a Civil Engineer with 20 years of experience.All the things you have said will apply to any kind of engineering field, may it be Mechanical, Electrical or Civil Engineering.
After graduation from engineering, you will do and learn everything you don't want to do in order to gain enough experience. You don't want to dress with tie but sometimes you will force to do it. You will be working with different kind of personalities and learn to mingle with them and some instances you might become their leader.
As a young engineer, we used to dream of working always in field as Project Engineer. We always want to be in the frontline of action in terms of job. But as we gain experience and at the same time adding years in our age, we are compel to do jobs in a top level management such as department head or section head and we will be forced to work sometimes more than 8 hours inside a room.
My attitude before as a young engineer is like your attitude. Previously I want always to work in the field, handling projects and leading hundreds of workers. By that time, I developed my leadership, self confidence and mature decision making. Now, after gaining enough experience and age, I learned to love the job which I hate to do before. I am now working as an Asst. Construction Manager.
Salary wise, a 80K - 100K (per year) will not be attained when you are still fresh engineer and still gaining some experience. But once you learn to become a leader, that salary cap is small compared to what you will be receiving. Also, having Masters Degree or Doctorate Degree will be more advantageous to earn fat cash.

It sounds like you're looking for feedback on job satsifaction rather than job skills. For that, I'd recommend http://www.yourlifespath.comand the Strong Interest Inventory (also available at many high school & college career guidance centers for less $).
As far as what you've described for skills, you could pick electrical engineering at a small company for the kind of mix of duties you described.

I'm not any kind of professional hiring person, but you did want others' thoughts on this. These are my opinionated thoughts:1) "Related Coursework" is self explanatory. "List of classes...including:" doesn't seem necessary
2) Resumes should be tailored to a specific job or company. If not, your references might not appreciate their names being sent out all over the place. "Available upon request" is usually acceptable. (Then bring them with you to an interview on a separate piece of paper)
3) References can state: Name, Title, Company (or a variation of those in your own preferred order) ...but, I'd take out "her title is"
4) List your internship experience with your work history, stating your job title as "Student Intern". It should help the flow of the resume...
5) You should review my cover letter and give me some pointers! Question is: Please review cover letter, and suggest things!! (It feels wordy, but that might be appropriate??)? in Other - Careers & Employment
