The best thing you can do is let your passion for your field show. Grad schools want to know that if you're taking up a spot in their program you're going to graduate and be a credit to them. It makes them look bad and affects the moral of other students when they admit someone and they never graduate. If there are issues with any of your credentials (so-so undergrad grades, low GRE scores) this is the time to talk about why that doesn't matter. If you've really matured over the last few years or it took you a few years to figure out how much you want this, say that. Everybody on that committee has been through grad school and knows how hard it is to get through it if you aren't absolutely committed to the goal, so convince them that you want this. Good luck!
