First, as a parent (and a son), I "congratulate" you for your grateful heart. Just being motivated to thank your parents is a a good start.I think Mindy has a good intro. What I would add to it is explain why you're grateful. How the college has helped you with your life.
Parents not only want to know they've helped but more importantly, that you will one day be independent & able to take care of yourself.
So, on that note, give them hope about where you are in life, and where you think you're heading, thanks to them and your college education.
Lastly, be yourself. It's the key in any form of communication, be it written or verbal. Don't stress, trying to be someone you're not. Be sincere and write as you would speak (without the slangs, of course!)
And ... as I wrote earlier, try and provide details to the general things you say. Don't assume they know everything about your academic and personal life. Explain yourself where it is helpful. (e.g. "Mom, Dad, I am grateful for being a student at _______ because...")
Ummm.... all I would add to all this is "I think about you often, and will always remember the sacrifices you've done for me. Love..."

I would still write them a thank you letter [as you never know when you may change your mind or another position linked to this company or this hiring manager might open up]. What I would do is politely thank them for the time they spent with you, as it reflects positively on you by doing so. Then, add a paragraph after saying that you feel you are not a good fit for the position.William Said:

As long as you're not the one who wasn't professional, you have nothing to worry about, and should write your thank you letter the same; if you don't know the interviewer's name, call the company and ask- its appropriate.
