Dependent clauses are often independent clauses (sentences, e.g. "It's raining.") with a subordinator (if/when/because/although/since/etc.) attached to the beginning ("Because it's raining"), which transforms them into a sentence fragment (dependent clauses, also called subordinate clauses, cannot stand alone as sentences).So simply take an independent clause, stick a subordinator (if you want to look them up online, they are sometimes called "subordinating adverbs" or "subordinating conjunctions") on the front, then add another independent clause to complete the thought.
The confusing thing about the assignment is that usually when the dependent clauses come after the dependent clause ("We're not going swimming because it's raining."), there is no comma. When the dependent clause comes first ("Because it's raining, we're not going swimming."), that's when there's a comma.

(That way each of the "two things" matches the other. that we had ... and that we discussed ...)
Alternatively, you could say:
The two things I liked most about the class were having a great teacher and discussing philosophy.
The two parts match, but it doesn't sound quite as good as the other version.
