Hello. I also live in Texas and homeschool my son.Here's the bottom line - you need to follow state laws and regulations but that doesn't mean that you CAN'T teach the unschooling approach.
I am familiar with Texas homeshool laws - luckily, this state imposes very little regulations on homeschoolers and the regulation you're referring to is the one that states:
"A written curriculum consisting of reading, spelling, grammar, math, and a course in good citizenship while operating as a private school [is required]."
Ready for the most important paragraph of my response? Here it is:
No matter what teaching approach (classical, CM, unit studies, unschooling, etc.) you want to take is totally up to you, but...you...must..comply...with...state regulations...period.
The way you asked your question, I don't see a conflict between unschooling (from what I know about this approach) and having a written curriculum.
REMEMBER - the Texas law NEVER states how SPECIFIC you have to be in documenting your written curriculum so you have plenty of leeway on how you want to document it.
For example, I would just have a heading for each of the Texas required topics (reading, spelling, grammar, math, and citizenship), and under each one, provide some general bullet points on what you plan to teach - no need to produce an encylopedia here, just some general high-level points on what you think ought to be taught.
Some final words, don't forget that unschooling is more of a "how" to teach rather than a "what" to teach. Since Texas is asking you as the home school teacher to document "what" you are teaching, it is totally up to you on "how" you will teach the topics. Therefore, unschooling and Texas homeschool laws can co-exist without any conflict.

I'm not sure what state you are in, but curriculums are usually optional. If your parents want to write their own, they are some great books out there they should look for that can help, such as "Write Your Own Curriculum: A Complete Guide to Planning, Organizing and Documenting Homeschool Curriculums"I've actually never heard of anyone writing a curriculum for gym. Gym is usually just the equivalent of physical activity. Homeschoolers do all sorts of things for phys ed., like taking karate at the community center or using a yoga DVD every morning or just going outside every day to run, bike, skateboard or swim. Gym is just being physically active for a certain amount of time per day.
I could see writing a schedule or something, but a curriculum would indicate more in-depth study of a subject, using references and materials, progressing and building on each step. So if gym for you is just going to the gym to work out, I can't see how that could be turned into a curriculum.
If you were studying health and fitness as part of "gym," you could turn that into a curriculum. It may begin with books general health and hygene, move on to nutrition and fitness, etc...

Being a teacher and working at a summer camp are very different.
When teaching in a school, you MUST use research based materials, assessments, etc. and be accountable to the local, state, and federal government.
In a summer camp program you must be ENTERTAINING while teaching something that the kids have given up their summer freedom to attend.
Overall, working backward from the end product/result to the beginning is a good start. For example say you want the campers to learn how to make a shirt. The final product is a shirt, just before that is sewing, before that comes cutting and measuring, before that comes reading (or making) a pattern, prior to that is planning what style/type of fabric, first is learning the history of the shirt.
I would assume that if you are being asked to do this, the camp director wants to know WHAT you will be doing with the campers. maybe ask to see what others have done in the past, or even take a look at "computer camp curriculum" or whatever else the camp offers.

HSLDA has a special ed counselor that could help you. I know in some states there are approval requirements for special ed students, such as IN? The 100 dollars you spend on HSLDA will give you legal representation should they try to deny your homeschooling validity and the access to the special needs counselor. It is well worth the $100 just to have them write one letter for you if the school tries to push you around.
