And as for demand...well, I think that goes without saying, write something well, provide interesting images and cater it to pre-teens and up and the money will roll in.
You might also look into a magazine called worlds of Fantasy that allows entries of artwork and writing, or both.

It's not free, but a technical or professional writing course can make a huge difference (LSU has an independent study course for $229). So can spending time editing others' work (or working with an editor who will take the time to explain why they made the changes they did).
