By their very nature, instructional essays cannot be written in the third person. They are always written in the second person (imperative) because an instruction is essentially a command with "you" left implied. The only variation would be caused by explaining something ABOUT a component (such as the hotness of a spice or why an ingredient is a good choice), which would be in the third person ("Habanero peppers are too hot for many gringos, so mild chiles may be substituted").

When I taught in community colleges, their second essay was instructional and always interesting. I got such little nuggets as "How to Operate a Terex 2000 Dump Truck," and "Preflight Checking a Blackhawk Helicopter (both from women); "Making Lunch for Three Children," and "Starting a Mink Farm" (both from Men). The grand prize went to "How to Bathe a Two-Year-Old." It began with "First, catch the baby," and every single paragraph began with a variation of "After catching the child again, . . ." I laughed so hard that coffee came out of my nose.

The point, of course, is that second person doesn't have to be dry and boring. Find The Rachael Ray Show one weekday morning and you'll see how she does it.

You're right, lengthy paragraphs can be a problem, usually in the eyes of the reader (who will likely be intimidated with so many words to plow through). You have to remember your reader, invite him/her to read your essay by making it easy to do so. The average paragraph should not exceed four - five sentences. Should this ever happen, all you really have to do is read through each paragraph, find a sensible place to split this and create a new paragraph from there. You can also vary the length of your sentences.
