A lot of people are slow writers. Let's say you have 1 hour to write the exam.

0:00 - 0:05 Read the topic and think about how you feel about it.
0:05 - 0:15 Organize 3 thoughts that you formulated about the topic and make a quick outline
0:15 - 0:45 Write out your paragraphs that stem from the thoughts you came up with
0:45 - 0:55 Review your writing and make it flow as best you can
0:55 - 1:00 Double check your grammar and make sure it looks good.

Stick to the schedule to help with the stress. Don't try to check over every sentence as you write it. Go back and fix mistakes in the last 15 minutes. Spend the whole writing time literally writing, whether it makes sense or not. Be sure to write in pencil.

Reward yourself for every half hour you concentrate. If you are male do your essay in short burst of say 15mins at a time with a short break - perhaps playing a level of a game then go back.
If you are a girl, think of a lovely treat when you've finished.
Girls and boys concentrate at different levels and you should take this into account and work with it and not fight it!
