On the other hand, an essay is usually a short piece of writing which is quite often written from an author's personal point of view and usually is performed in the middle of a tern or semester and it tackles a certain issue that might be part of the course of the semester, unlike a term paper that can tackle any topic of the student's personal choice. Essay is usually shorter than 5 pages while a term paper is usually up to 10 pages or more.

You could charge by the page. That would be the easiest way to do it. Or you could have a flat rate for a certain number of pages and then increase the fee if someone has a paper that goes over the set number of pages.
