Hi KieraI would personally opt for 1. DSM-IV definition of anorexia nervosa:
•Refusal to maintain body weight at or above a minimally normal weight for age and height: Weight loss leading to maintenance of body weight <85% of that expected or failure to make expected weight gain during period of growth, leading to body weight less than 85% of that expected.
•Intense fear of gaining weight or becoming fat, even though under weight.
•Disturbance in the way one's body weight or shape are experienced, undue influence of body weight or shape on self evaluation, or denial of the seriousness of the current low body weight.
•Amenorrhea (at least three consecutive cycles) in postmenarchal girls and women. Amenorrhea is defined as periods occurring only following hormone (e.g., estrogen) administration.
DSM-IV definition for Bulimia nervosa:
•Recurrent episodes of binge eating characterized by both:
1.Eating, in a discrete period of time (e.g., within any 2-hour period), an amount of food that is definitely larger than most people would eat during a similar period of time and under similar circumstances
2.A sense of lack of control over eating during the episode, defined by a feeling that one cannot stop eating or control what or how much one is eating
•Recurrent inappropriate compensatory behavior to prevent weight gain
1.Self-induced vomiting
2.Misuse of laxatives, diuretics, enemas, or other medications
3.Fasting
4.Excessive exercise
•The binge eating and inappropriate compensatory behavior both occur, on average, at least twice a week for 3 months.
•Self evaluation is unduly influenced by body shape and weight.
•The disturbance does not occur exclusively during episodes of anorexia nervosa
Both are in the field of biological/social psychology and i've just completed an essay on the same topic and got a really good mark for it as you have loads to talk about on the subject. You can talk about the biological side of ED's (ie- predisposition, depression and serotonin, anxiety, nurture ect) and on the social side you could talk about (and this is how you can talk about the 'evolve' part of the question) is not just the influence of magazines, fashion, the increase of 'gym and fitness culture' (including weight watcher type programmes) but more importantly and increasingly the influence of the internet: in particular 'pro-ana' and 'pro-mia' websites which is a huge growth area in research and you should find tons of research on this.
Also add some theories and apply them to eating disorders: i.e social learning theory, classical conditioning, social representation theory ect.
I hope you do really well with this hun, I found it such an interesting topic that it didn't seem like hard work at all to me, and i even struggled to keep within the word limit- so if it appeals to you i reckon thats half the battle. If you need anymore help- i'd be happy to help

My dear Kiera....Well...a good suggestion would be to get a copy of the "Journal of Health Psychology" and see, if you find a topic for your essay....
Other than that...I can suggest the following: "The social significance of Health Psychology by addressing the social, political and economic contexts of psychology and health processes"!
