For a simple handbook:
1. Take several pieces of stacked paper and fold the entire stack in half.
2. At the crease of the fold, punch evenly spaced holes with a hole puncher. Ideally this should be tiny holes, not a 3 hole punch.
3. Thread string, ribbon, or yarn, through the holes and tie securely, but not so tight that the holes rip through the crease.

To me a nutrition book is boring and has been done a million times.....How about all the junk that's in our food. Boxes, can, and etc have a list of ingredients and many things are words that I can't pronounce let alone want to eat. Some of the stuff sounds more like something that should be in a chemistry set and not our food.

First thing would be to go through the food at your house or grocery store and read the labels. Then do a web search for the chemistry set type words and/or use an online dictionary. In the process of doing the research you should find web sites that will have a lot of info. And yes, you should cite your information especially if you publish your findings in a book.
