A portfolio is just a collection of writing pieces, from 2-200, but for a college course I'd say 4-9 of your best pieces would be good. Too many will bore the instructor. You could even get away with 3 that you are really proud of. For finding non-fiction topics to write about, just live your life and you'll find something that will make you say "that's interesting". Write it down, and in about 2 days you'll have a pretty good list. Pick the most interesting ones and get to writing, that's my advice to you!
