I personally take a course named " Writer's craft" and it is extremely interesting. Basically at the beginning everyone writes a short story and then everyone reads each others stories and we have a huge circle of discussion. It's productive as it stimulates everyone's creative juices and also creates good discussions as the stories always relate back to real life. Seeing that it would be a college club, everyone is busy and probably won't have the time to write their own personal short stories. But I think introducing creative material to the group would really interesting and a lot of people will learn from the introduction of different writing material and different concepts. Poetry sessions, get a little into different scripts of plays or movies... the club has room for so many different pieces of writing and that brings great discussion, which I know a lot of people will enjoy.

give people an idea or picture to write about, and compare stories after you finish them.
for example, you show them a picture of a boy digging in a sandbox. And perhaps you give them a few further instructions, maybe a challenge like the story must not have anything to do with treasure hunting or the beach.
