While writing your plan, consider working part time in a franchise that you are considering a purchase of. Talk with franchisees from another part of town who won't be threatened by your presence. The advantage to a franchise is the established reputation of the business; however, that can work both ways. Just one bad experience with a restaurant reflects on the whole franchise with strong feelings about the company and not the individual restaurant. People who patron franchised restaurants are looking for the uniformed look and feel of that establishment which limits the freedom that you have as an owner. You are also paying for the priviledge of the name and must follow rules set by the franchise. A franchise requires certain amounts of liquid capital and the fees and royalties can be high. Make sure you are 100% certain that's the route you want to go.Established sandwich shops can be good or bad for reputation reasons as well. Why is the owner selling? I am not asking what they are telling you but rather the real reason. Is the business not profitable??? Make sure you check out any liens on the business before plopping money into a business, any business. It will be well worth the advice of an attorney and accountant. Get every possible question answered to your satisfaction.
My suggestion would be to start from scratch but to learn as much as you can about the industry and profitability. Entrepreneurs always have visions that their business will take the area by storm but such is not the case. You will need to advertise to draw people in and that's where the franchised operation is the better option. Your franchise will have national exposure but at a cost, a high cost.
There are pros and cons to each venture but just remember you are responsible for your employees as well as yourself as well as the business overhead. All businesses carry risks and rewards so research is the key to success. Partner yourself with qualified people and organizations. Network with others. Believe in yourself and your product.
Don't put your dream on hold. Do something today to move forward. There's nothing worse than looking back in 5, 10 or 20 years and saying, "i wish i would have..." DO IT.

Reference List: Basic Rules
Your reference list should appear at the end of your paper. It provides the information necessary for a reader to locate and retrieve any source you cite in the body of the paper. Each source you cite in the paper must appear in your reference list; likewise, each entry in the reference list must be cited in your text.
Your references should begin on a new page separate from the text of the essay; label this page References (with no quotation marks, underlining, etc.), centered at the top of the page. It should be double-spaced just like the rest of your essay.
Basic Rules
All lines after the first line of each entry in your reference list should be indented one-half inch from the left margin. This is called hanging indentation.
Authors' names are inverted (last name first); give the last name and initials for all authors of a particular work unless the work has more than six authors. If the work has more than six authors, list the first six authors and then use et al. after the sixth author's name to indicate the rest of the authors.
Reference list entries should be alphabetized by the last name of the first author of each work.
If you have more than one article by the same author, single-author references or multiple-author references with the exact same authors in the exact same order are listed in order by the year of publication, starting with the earliest.
When referring to any work that is NOT a journal, such as a book, article, or Web page, capitalize only the first letter of the first word of a title and subtitle, the first word after a colon or a dash in the title, and proper nouns. Do not capitalize the first letter of the second word in a hyphenated compound word.
Capitalize all major words in journal titles.
Italicize titles of longer works such as books and journals.
Do not italicize, underline, or put quotes around the titles of shorter works such as journal articles or essays in edited collections.

For example, if you owned a ski shop and during the summer your sales are almost nothing, people would say that it's because it's the "nature of the business" to explain why their sales are so slow in July.
